Mars Bar Slice Recipe



Crispy rice bubbles are bound by a rich, slightly chewy, chocolate-caramel mixture and spread with a luscious, buttery chocolate icing. This slice is very moreish!

This recipe uses 270g of Mars Bars. Here are three ways to get this amount-
264g bag of fun size Mars Bars (close enough!)
4 1/2 x 60g Mars Bars
3 King Size Mars bars, and half a 60g Mars Bar

Makes 18 pieces (each about 4.5cm by 6cm).

We use a 20ml tablespoon and 250ml measuring cup for all of our recipes.

120g butter
270g Mars Bars
1 1/2 tablespoons (30ml) golden syrup
3 3/4 cups (120g) rice bubbles

Line an 18cm by 28cm baking tray/dish.

Place butter, Mars Bars and golden syrup in a saucepan over medium-low heat. Stir constantly, using the spoon to break up the Mars Bars and squash any bits of nougat that are slow to melt.

When the butter has melted and only small unmelted bits of nougat remain, increase the heat to medium, stirring constantly. The mixture may appear separated at first. Keep stirring until the mixture thickens slightly, and is fairly smooth and amalgamated. Remove from heat. © exclusivelyfood.com.au

Above: The Mars Bar mixture is ready when it has a creamy (ganache-like) consistency.

Place rice bubbles in a large bowl. Add Mars Bar mixture and stir to combine, trying not to crush the rice bubbles. Press mixture into prepared pan and refrigerate while preparing the chocolate icing.

Spread slice with icing and refrigerate until set. Cut into pieces to serve. Store in an airtight container in the refrigerator.

Rich Chocolate Icing
225g milk chocolate (we use Cadbury Dairy Milk chocolate)
45g butter

Melt the chocolate and butter in a small saucepan over very low heat, stirring frequently. Alternatively, melt in a double boiler or in a microwave-safe bowl in the microwave.

  8. Put heaped tablespoons of the mix into foil fairy cake cases and top with melted chocolate to make individual mars bar slice "bites". Great with after-dinner coffee.

  12. A friend of mine made your recipe and she used it for a subject of an essay. She also decided to make some and bring it into the classroom. Luck I was there that day because I got to have a taste test and it was the best thing I had ever had. I wanted more and more but it was all gone:(

  14. Thankyou so much for the recipe! Didn't have the golden syrup so just didn't add that in, but the slices turned out perfect anyway. Brought them along to a girls night in and my friends all thought they were amazing. I'll definitely be trying out more recipes from this site.

  17. I have made this 3 times and it is delicious every time.

    I have taken the advice of one anonymous comment to omit the golden syrup for two of times I made the slices and they indeed taste better...to me. Apparently, the toffee-ness from the Mars bars are just right without being overly sweet.

    Just one quibble though...the rice bubbles turns out more chewy (in a good way) rather than crispy (as mentioned in the introduction) for all three times. Is that how they are supposed to be? Or am I doing something wrong? Also, what's the best way to cut these slices without chunks of those toffee goodness sticking to the knife?

  18. We find that the rice bubbles retain most of their crispiness for at least a couple of days. Apart from omitting the golden syrup, do you make any changes to the recipe?

    Once the slice is cold and set, we cut it with a hot, dry knife.

    Only qualm is that every time we go to make the chocolate icing it turns into a gritty, paste like substance instead of being smooth. What are we doing wrong? :P

    Did you melt the chocolate and butter over low heat? Overheating can ruin the texture of chocolate.

    We have an electric cooktop and use the lowest possible setting when melting chocolate. If you are unable to achieve a very low heat level with your cooktop, you could use a bain-marie when making the icing.

    We did have trouble with melting the chocolate, second time round we melted it in a bowl over boiling water.

    Are you using chocolate 'melts'? If this is the case omit the butter, you dont need it as the melts are made especially to melt smooth like the consistency obtained with eating choclate and butter - I learnt this by making the same mistake :)

  31. About to make the Mars bar Slice, can I use Nutri Grain or a Plain Label Version which is a bit smaller in size and less sweet, but more crunchy. What do you think? Thanks for having it on Line. Lee

    We wouldn't use a Nutri-Grain type cereal as a substitute for the rice bubbles. However, if you decide to try it, we recommend that you chop or crush the Nutri-Grain into pieces about the size of a rice bubble.

    I make it up and just use a ganache icing - microwave a 250g block of chocolate and 1/3 cup cream on low, stirring periodically, and presto-- smooth creamy ganache!

  42. Hi I made this recipe for a Craft Fair (2 lots) one with raisins one without - both sold very fast and tasted great. When making the icing I use a heat diffuser under a NON stick pot and have never had any trouble so far.
