Chocolate Caramel Slice Recipe



Compared to this well-known version of chocolate caramel slice, our slice has a greater ratio of caramel to base. To achieve this, we make the caramel using the standard one can of condensed milk but make a thinner base. We also like the caramel layer to be thicker (in height), so we bake the slice in a smaller pan.

Preparation time: about 35 minutes (excludes baking time).

Serves about 12.

We use a 20ml tablespoon and 250ml measuring cup for all of our recipes.

Base
112g (1/2 cup, firmly packed) brown sugar
56g (2/3 cup) desiccated coconut
100g (2/3 cup) self-raising flour
85g butter, melted

Preheat oven to 180 degrees Celsius (160 degrees Celsius fan-forced).

Grease a 20cm square cake pan and line the base and sides of the pan with baking paper. © exclusivelyfood.com.au

Stir brown sugar, coconut, and flour together in a large bowl until well combined. Add butter and mix until well combined. Firmly press mixture into prepared pan using the back of a spoon.

Bake for 10-12 minutes or until lightly browned and slightly risen.

Set base aside to cool for about 10-20 minutes (while making caramel). Leave oven on.

Caramel Filling
30g butter
40ml (2 tablespoons) golden syrup
395g (1 can) sweetened condensed milk

Place butter and golden syrup in a medium, heavy-based saucepan over medium heat, stirring occasionally. When butter has melted, add condensed milk. Stir constantly over medium heat for about 9-12 minutes, until caramel thickens.

Gently spread caramel evenly over base. Return to oven for a further 10-12 minutes (a 1/2cm border of lightly browned caramel should form around the edges of the slice).

Allow slice to cool to room temperature.

Topping
150g milk or dark chocolate, melted (we use Cadbury Dairy Milk chocolate)

Melt the chocolate in a small saucepan over very low heat, stirring frequently. Alternatively, melt the chocolate in a double boiler or in a microwave-safe bowl in the microwave. Spread melted chocolate over caramel.

Refrigerate slice until chocolate is just set, about 20-30 minutes. Remove slice from pan and cut into pieces. We use a hot, dry knife to cut the slice (fill a tall glass with hot water, dip knife in water for a few seconds, and wipe dry with a clean tea towel).

  7. I find it's really easy to cut this slice if you flip it over and cut through the base first. That way the caramel doesn't squish everywhere.

    Unlike evaporated milk, condensed milk contains a large amount of sugar. Evaporated milk would not be a suitable substitute for the condensed milk.

    If you mean the height of the caramel layer, did you use a 20cm square baking pan? The caramel layer will be thinner if a larger baking pan is used.

    If you are referring to the consistency of the caramel, you will get a thicker consistency if you increase the stovetop cooking time.

  27. We freeze pieces of the slice in an airtight container and transfer them to the fridge to defrost. Freeze the pieces in a single layer, or layer them between sheets of baking paper etc.

  37. You can taste the coconut in this slice, but we wouldn't say it is the dominant flavour. However, if you don't like other slices that contain about 2/3 cup coconut then you probably won't like this one! As an alternative, you could make a shortbread base.

  43. When cut into 4cm squares, this slice yields about 25 pieces.

    If you line the base and sides of the pan with baking paper, the caramel shouldn't come into contact with the pan.

  48. When melting chocolate, the texture can be ruined by overheating or by contact with even a tiny amount of water. What method did you use to melt the chocolate? Did you use very low heat? Did any water get into the chocolate? If you try again, ensure that your utensils are dry and use very gentle heat (chocolate melts at about body temperature).

  49. tried making this with the coconut and although it was nice I would prefer a shortbread base

    can you provide a recipe/instructions on how to do this (can you include the temp for oven etc) as dont want to mess it up by burning base.

  53. The longer the caramel is cooked, the thicker it should become. If your caramel was runny, then you could try increasing the stovetop cooking time.

  57. The slice won't be the same if you use plain flour instead of self-raising flour; however, it should still taste nice. Do you have any baking powder? If so, you could make self-raising flour by adding 1 1/3 teaspoons of baking powder to a 2/3 cup measure, and then filling the cup with plain flour.

  59. Hi Antony,

    We recommend using a saucepan with a thick or heavy base to help prevent the caramel from burning on the bottom of the pan. If you notice the caramel starting to catch on the bottom of the pan, you can reduce the heat and stir more vigorously to prevent it from burning.

    Did you use an electric cooktop or a gas cooktop? We have an electric cooktop and the times and temperatures given may need to be adjusted if you are using gas.

  62. Made this just yesterday. It was going great, until the caramel started sticking to the bottom of the pan. I didn't have any golden syrup in the house, so being the inexperienced cook, I replaced it with manuka honey. It went all lumpy and porridge-like and brown. It now tastes of manuka honey, but it is quite delicious!

  65. The golden syrup makes a significant contribution to the flavour of the caramel. If you don't have any golden syrup, you could try substituting maple syrup or a small amount of treacle.

    Unfortunately, we aren't aware of any suitable substitutes for the sweetened condensed milk in this recipe.

  70. I made this last night and after i had made the base i discovered i had no golden syrup so using my culinary knowledge, i used brown sugar which worked perfectly!! Also for the chocolate top i used dark chocolate and cream to make a ganache which complemented it nicely:)

    1) Use a knife or fork to make a pattern in the chocolate before it sets
    2) Sprinkle finely chopped nuts over the chocolate before it sets
    3) Drizzle the chocolate topping with melted white or dark chocolate

    Reading the reviews I didnt look any further! And now I must leave my own comments. True to others this slice was SEN-SAT-ION-AL !!!
    All absolutley loved it, 5yo has asked for it again - the first (double) batch didnt last a week!

    My cararmel ended up rather chewy and a little 'powdery' or gritty if that makes sesne - not sure how as I constantly stirred and it didnt catch at all....the chewy bit was great we liked it like that, but wasnt sure what caused the 'gritty' texture. Any ideas?

    It wont stop us making it again, thats for sure :-)

  78. To the person whose caramel had a powdery/gritty texture: We aren't sure what could have caused the problem. Did you alter the recipe in any way? Did your caramel look like the caramel in our photo? Our caramel isn't chewy, so it sounds like yours was more cooked than ours. Is your cooktop gas or electric?

Hi girls, I am very excited about making this slice as it looks amazing so I went out to buy the cake pan. there was a 22cm one that measured 22 on top but the base was 20.1cm so i bought that one. There was another one that said it was a 20cm pan but when the shopkeeper measured the base it was only 18! I am confused! When you say 20cm do u mean the base or the top of the tin? Will the 22cm one i bought be ok? With the base being only 20.1cm? do I have to adjust the amounts or oven times? Want it to be perfect!

  81. Our 20cm square cake pan measures 20cm across the top (measured parallel to the side) and 18.5cm across the base. It will be okay to make the slice in the pan you bought. Your slice will be a bit thinner than ours, so you may need to reduce the baking time slightly. If you would like your slice to be the same thickness as ours, you could multiply each of the ingredient quantities by 1.2.

I made this slice today and it didn't turn out as well as I thought, The caramel was good but I found the base a bit chewy, buttery and heavy i'd rather go for the shortbread base or just you're typical plain flour, butter and egg base. It was all a bit stodgy and sickly. And yes I cooked it properly and followed the recipe.

  87. Mmm divine! I doubled the recipe and put into 22cm x 38cm tin so the caramel was nice and thick. Also put a dash of oil with the chocolate so it spreads easily. So yum. Next time i'm going to try it with macadamias before putting caramel in. Oh and i microwaved the caramel too stirring every minute it saves alot of time.

  92. I use a different recipe for my caramel slice (blogged it just a few weeks ago) and it is always incredibly popular. For me the best thing about making it is the chance to scrape out the saucepan of all the leftover streaks of caramel :-)

    I had been curious if it was possible to freeze it, so I did a google search which led me to your blog... glad to read here that people have frozen the slice successfully!

  97. i had some problems with my slice..first of all it didn't even rise in the oven..i don't know why..and then it seemed like 1 can of condensed milk wasn't enough, because in the oven the caramel went bubbly, stringy and holey..argh im sure that itl still taste good but it doesnt look that good lol!

  98. This is simply disgustingly delicious!! Yep - you read that right. Someone said it was dangerously delicious after having one that I had made. To get the chocolate top coating not to crack in all different directions when cutting it into slices, I just add a little bit of copha to the chocolate when melting it. Thanks for the recipe Amanda and Debbie - my mum and I now have a treat when we are away from home out of Australia. Eating it is a nostalgic experience since we don't have them here in Sweden.

  101. Hey guys, I made this and my caramel bubbled in the oven after only a few mins, i turned it right down to 100 (its a fan forced crazy oven) and had to take it out early, its a bit 'cooked'. Did i perhaps overcook the caramel on the stove top? Any tips would be great. ps isnt it fun licking the condensed milk tin, so yummy!

  102. Did the slice base seem overcooked? If not, then maybe the caramel was cooked for too long or at too high a temperature on the stovetop. When cooking on the stovetop, did you notice the caramel boiling or catching on the base of the saucepan?

  104. We have only ever cut the slice with a knife, but if you'd like to try using cookie cutters, we have the following suggestions:
    1) Consider adding a small amount of oil to the melted chocolate to make the chocolate less likely to crack when cut
    2) Leave the slice in the pan and cut all of the pieces before removing them so the caramel doesn't squeeze out the sides
    3) Use a warmed, heavy duty cookie cutter
    4) Cut the slice when the chocolate is just set (if the slice has been refrigerated for a long time, it will be harder to cut)

  108. Wow, I just made this, based on all the positive reviews (plus I have made about 10 of your other recipes and all turned out fabulous!).... BUT found it way too sweet! My husband took two bites and couldn't finish the rest of the piece. Even I can't get into it as it is too sweet for me, and I love sweets. I followed the recipe exactly and didn't have any probs making the caramel or choc, but think it may be better suited to the extreme sweet tooths! :)

  114. Hey, I made this recipe and it turned out great, except the second time I made it I forgot to monitor the oven when setting the caramel and I over cooked it! It came out a little more chewy then I'd like, but my family still loved it. I wanted to try again but double the caramel (I'm using a slightly larger tin so its usually thin) and I just wondered how long should I cook it for in the oven?

  119. To the person who asked about the ingredient quantities for a 20cm by 30cm pan: We would multiply the ingredient quantities by 1.5. If you'd like the caramel layer to be thicker, you could double the quantities for the caramel.

  125. Love the recipe, but needed to cook caramel for much longer. I live in singapore so our condensed milk seems much thinner than australasian varieties. Anyone in the same boat- you will have to cook for longer, and it will be a bit thinner than the gorgeous pictures.

SO easy and delicious! for those of you who aren't fans of coconut like me, you can substitute it 1:1 with ground almond, works PERFECTLY and has a nice nutty flavour! Also following another viewers advice i used brown sugar instead of golden syrup which i didn't have. besides that, i wouldnt change a thing :) thanks for the recipe!

  127. this recipe is fantastic. i made it for one of my friends who shared with some more and now im getting requests left right and center. its so easy and i love that its not delicate. u literally just throw all the ingredients together and it always ends up fantastic. i stuffed up my caramel, it was a little lumpy on the stove top but made no difference in the end, it was just awesome!

I don't think mine will look as good as the photos (i think i baked the caramel for too long and it was kinda bubbly). Just looking at the pictures makes my mouth water. Oooh hurry up and set....

  133. I wanted to say, Anonymous who left the comment about the gritty caramel...The only thing I could think of would be Golden syrup being old. If it was sitting in the pantry a while it would crystallize slightly, also if it was stored in the fridge this could happen.

    i am makeing this now. i have made the base and im now baking the carmel but when i put the caramel into the pan with the base it was runny. i did't have any consendsed milk so i used evaperated milk (as shop said that would be fine) is this ok and what do you think about the runny caramel?? HELP.

  142. I made this for the first time today. Although it turned out pretty good, my caramel didn't turn out quite right. It didn't seem like it had set properly. I'm not sure if it was because I didn't let it cook long enough on the stove top. I stirred it constantly on low heat, however, it started to get these little brown/caramel colour lumps, so I switched it off. Is it likely that not having cooked it long enough could have caused it to be soft rather than firm?
    Way to go girls, your recipes are beautiful.

    I often use a shortbread base for this recipe. Or you could buy store bought shortbread, bash it up and add metled butter, layer the bottom of the pan and bake it for about 10min. Perfect!!

  154. Great recipe! I thought I had overcooked the caramel as it had started to bubble at 10 min but it was fine. Turned out I had overcooked the crust, a bit too crunchy. Really easy to make, however I found that the chocolate needed to set for more than 30min - I left it in the fridge for over an hour. I used someone's tip from the blog to add oil, so the choc doesn't crack and it worked a treat! Thanks!

  160. Great slice, forgot to cook the caramel after spreading over the base but it still turned out fine. Would benefit from a different base - this one is quite buttery & crumbly - would be even more delicious with a hazlenut slice base that is a bit softer/denser - ie. marie biscuits etc.

  163. Hi thanks so much for the recipe! delicious! Just a hint to add a bit of texture to the base, use half a cup of oats. Suprisingly it makes a huge difference and comPliments the brown sugar in the base. Thanks again and I loved the photos they really helped me to know hat I was on track.

  164. Great recipe. Is it possible to thicken the caramel for too long in the stove top, thus making it chewy? I doubled the filling recipe so adjusted cooking times. What do you recommend to do if doubling the filling? Thanks

    The longer you cook the caramel, the thicker and chewier it will become. If doubling the ingredients, we would use a larger saucepan and increase the cooking time slightly (by maybe 2-3 minutes).

  166. for some reason i found that the quantities didnt quite match up.
    i had more than enough base using the original recipe but i had to double the caramel as the original quantity made such a thin layer.i used 200g of chocolate and it barely covered the caramel layer. i used a 20cm pan so not sure what went wrong

It didn't quite work out and when i pulled it out of the oven for the second time it was still really runny but it still tasted so good!!! my dad and i fought for the last peice!!!

  170. I have to bring several pieces for my friends to try at school, because they're so eager about eating it :) It's absolutely delicious, though my mum said she doesn't like the coconut. The base was actually a bit bigger than the caramel...and it was kind of crumbly, maybe I didn't add enough butter? The caramel was also kind of squishy when you bit into it, but I probably didn't cook it long enough, or leave it in the fridge...Thank you for this recipe!

  177. Caramel slice was fab and caramel was excellent. Make sure you heat the condensed milk for the required time so it thickens well. I used an expensive chocolate (Lindt) and that made the chocolate on top really yummy. If you freeze with for about 25 minutes in the freezer/deep fridge (not your normal bottom fridge), you get a hardened sort of crispy top which is quite nice.
