Rocky Road Recipe



The ingredients in this rocky road could easily be varied to suit individual tastes. Turkish delight or dried apricots could replace the glace cherries (dried apricots would be especially good in white chocolate rocky road). Macadamias or toasted silvered almonds would be good substitutes for the crushed peanuts.

When making this rocky road, we layer the ingredients rather than stirring them all together, as we feel this gives the best result.

500g milk, white or dark chocolate (we used 2 x 250g Cadbury Dairy Milk blocks)
90g glace cherries (we used red Winn cherries)
150g marshmallows (we used pink and white Pascall Marshmallows)
45g (4 level tablespoons) crushed peanuts

Line an 11cm x 22cm bar tin or similarly sized container. As a liner, we use a freezer bag that has been slit along the side and base and opened out flat. Aluminium foil would also be suitable.

Chop marshmallows and cherries into quarters.

Melt chocolate over very low heat, stirring occasionally. We don’t use a double boiler, but you could if you are concerned about overheating the chocolate. © exclusivelyfood.com.au

Spread about one third of the melted chocolate over the base of the lined tin.

Top chocolate layer with half the marshmallows, cherries and nuts.

Spread with half the remaining chocolate and top with remaining marshmallows, cherries and nuts.

Spread the rest of the chocolate on top and refrigerate for at least 8 hours, or until completely set.

When set, remove rocky road from the tin, peel off plastic or foil, and cut into pieces. We store the rocky road in an airtight container in the refrigerator. © www.exclusivelyfood.com.au

I decided to make this rocky road as a treat with tea and coffee for a 50th b'day party. The rocky road didnt even make it to the party as it was eaten by the family before hand. I substituted glace cherries for Turkish Delight. It was a real hit, everybody loved it!

i thought this was a fantastic recipe and the way it was set out and all teh pictures makes it really easy to follow. i decided to make the rocky road and replace the cherries with turkish delight and the peanuts with almonds. i used top quality belgium chocolateso although that may have helped, i think it tasted great. it was maybe a little too sweet so next tiem im going to experiment with dark chocolate and maybe a few more nuts. thanks for the recipe.

Hey, I foung this dish to be suprisingly tasty!! yummy yummy in mmy tummmy. Jess and myself worked hard in the kitchen that sunday morning and i think i burnt 100 calories off just by running aroung in the kitchen .... GOLLY GOSH!! your sincerly the beautifuls.

i had a big crowd to feed so used a tin twice the size stated here, but actually needed (at a guess) using 3 times the chocolate (fortunately i have plenty stashed around the house).

i used the glass-bowl-over-a-pan-of-boiling-water technique of melting the chocolate. much safer, if you're a kitchen numpty like me.

i wanted to get some chocloate colour & flavour changes in so i went for:

* bottom layer milk choc; then
* bashed up hobnobs & walnuts; then
* the rest of my milk choc plus most of my 70% dark choc; then
* mini marshmallows & chopped up ready-to-eat dried apricots; then
* that last of the dark choc melted with dark choc toblerone & 70% cocoa drinking choc flakes (ok i was getting *really* short of chocolate by this point); then
* malteasers, half pushed into the surface; then
* scraping the last of the melted milk choc from around the bowl & splatting it across the surface to get drizzle lines.

top tip: use a really long knife to cut it - that way you can put pressure on the whole blade evenly. sticking it pointy end in first just got real messy real quick.

oh & the freezer bag tin liner is a definite winner, but i had to use 2 bags to line my huge tin & managed to get choclate under the seam, which meant i had to chop it out this morning once it had set. doh!

This was a great recipe - especially the method how it is layered instead of all jumbled together.

I used turkish delight and macademias instead of cherries and peanuts and it was delicious.

Boxed up in some pretty boxes it will make a great gift.

I made this recipe with Dark Chocolate, Turkish Delight and Pistachios and it made a real difference, it was still rocky road but so much better. Excellent recipe and great layout to follow. Thanks :)

Made this recipe a couple of days ago and toasted some dessicated coconut and added that to the recipe.Have been making rocky road for a while and in the past have added crushed up honeycomb bar such as crunchie in place of the nuts too.

Rocky road was great. I also used Turkish delight instead of glazed cherries. It turned out great and I got heaps of comments. The photography you used was great. It inspires you to want to make it.

I spent heaps of money buying this yummy treat, but now i have sucessfully attempted to make this sweet beast at home myself. It surely won't help with my healthy diet but is definetly good for times need for happiness and rocky goodness. This recipe ROCKs my ROAD,

This recipe is great for adults but i made it for my daughters and used chopped up jelly babies instead of cherrys and violet crumble crushed instead of nuts they loved it...

I made this recently but added many different things to what I read here.

I added chopped up Flumps (Marshmellow), Areo Mint Bubbles that I crushed in the packet and a packet of crushed maltesers as well as a chopped up milky way bar. I used chocolate hobnobs for the biscuit part and then chopped up macadamia nuts!!! The chocolate I used was Green & Blacks milk and some dark chocolate to balance it out a little bit.

Result..... It was lush and I got loads of comments.

I know it sounds like I had a lot of things but I didn't go mad with quantities.

I replaced the peanuts with macadamia nuts, the cherries with Turksish delight, added shredded coconut and used dark chocolae 1/3 of which was dark chocolate toblerone. I had some spare ferrero roche chocs around and popped them in whole....

To die for!!! I made it special because it was part of my Kris Kringle present to my brother in law.

i wish i had seen your recipe before i made my first RR, my mallows melted, it was all a bit gooey, but it tasted good anyway, it is chocolate!!!

this recipe can be altered for little kids party's very easily!!!

instead of cherries nuts and dried fruit. You add aleins snakes (the pack with the blue and red ones look great in layers). Keep the marshmallows and add a few sprinkles on top!

What a hit!I made this for xmas and it disappeared quicker than i could blink. Thankyou for a great recipe site.The pictures make it so much easier to try recipes you haven't tried before. I have since made your zucchini slice and am slowly going to work my way through the list.....Yummmmmm!

thanks for the recipe! I was just checking the procedure for making rockyroad and it was different to the one I made at school. the way it was layered rather than mixed was a great idea. also how it was quite tall rather than just flat looked really nice. :]

Awesome recipe,

i found it quite easy to make, instead of peanuts i used macadamias, with glace cherries. Worked really well, the images to show the steps was really really useful ,and helped alot! thanks!

This was yummy, i made it with white chocolate, dried cranberries, rice krispies and left out the nuts altogether. (nut allergies!) Though were it just for myself i think pecans or pistachios would of went well.

I decided to make this for my boyfriends birthday, I replaced the cherries with wiggly worms and just didnt add nuts.
It was so nice!

My mother-in-law requested I make rocky road a few weeks ago & as I was in no way a 'good confident cook', I turned to the internet to grab a recipe & it was the best thing I was asked to do because I found this website !! I have since made rocky road 3 times, using fruit & nut choc or macadamia nut choc instead of plain choc. It has become a HUGE hit with the family & will be incorporating it into my xmas hampers this year !!

I have also made numerous things for dinner using the recipes from this website - I have actually learnt to cook !! THANK YOU !

Having made this at Christmas last year (to great acclaim), I knew making it for our Father's Day stall at school would be a fantastic idea. I've since had Mother's coming up and asking for the 'recipe'. This really is a simple but very delicious Rocky Road. Thank you ladies!

Thanks for the recipe. This was great and like others who have posted here, I was doing a trial run for Chrissie presents. I found it extremely sweet so I think I'll find some darker chocolate, maybe experiment a little and add more stuff like nuts, rice crispies so the chocolate doesn't overtake everything too much.

I used those raspberry lollies instead of cherries. Yummo!

I found that I had chocolate left over as well as marshmallows and a few raspberries and a handful of crushed nuts so I dipped the top of the marshmallows into the melted chocolate and then dipped the chocolate topped marshmallow into the crushed nuts. Soooo nice!

I made a Rocky Road recipe out of an American cookbook...very simple too. I melted 200g Dark chocolate and 200g milk chocolate with 3 tablespoons of crunchy peanut butter in a dish in the microwave. Then when melted added 1/2 cup peanuts (sometimes more) and one cup cooking marshmallows, the little ones and mixed them all in together making lots of little stacks on greaseproof paper and put in fridge to set. VERY easy and very yummy. Dark choc only is too rich and Milk choc only one eats too many!!!!

We have never kept the rocky road for more than a week, but it should be fine to do so. Store in an airtight container in the refrigerator.

The recipe given is really good enough but for a birthday that had just passed, I decided to play around with textures and colors.

I used dark chocolate on the bottom layer. I topped it with white-colored marshmallows and macadamia nuts (a pretty light-colored nut) to give contrast to the dark chocolate. The middle layer was milk chocolate and then, pink marshmallows and red gummy candy (or gummy bears or jelly snakes) went on top. Again, these were chosen to contrast with the middle milk chocolate layer and the top layer of white chocolate.

It looked and tasted so good. Not only did it looked like a piece of art, but I had satisfied the cravings of all types of chocolate lovers, from dark to white. I am definitely making this again...!

Looks absolutely wonderful and tastes great (I substituted Turkish delight for glace cherries, added some almonds and some coconut. Only problem is I didn't adjust the choc quantity appropriately to account for the extra dry ingredients and it doesn't hold together properly.

Will DEFINITELY be making this again.

this was an awesome recipe.

since i tried just milk chocolate the first time, it turned out to sweet. this time, i chose to use 70% dark chocolate as base, cadbury top deck as the middle layer and the rest of the dark chocolate mixed with some top deck as top layer. i also added desiccated coconut and whole oreos. i used coloured marshmallows to add colour :)

Did by recipe except used snakes, and 2 x 250gm blocks of Cadbury-Macadamia, also used a 12cm square container. Was not enough chocolate for a 3rd layer. Will do 3rd layer with dark chocolate tonight. It's L@@kin' wicked! Ta

Hi, I'm making this rocky road now, but when I melted my chocolate, instead of being all smooth, it seemed all grainy and not melting properly. I tried putting in a bit of butter to help it, but it didn't really do much. I think it might have been because I used a bit of normal eating chocolate in there, but I'm not sure. Do you use normal eating chocolate or cooking chocolate? Because I think Cadbury is eating...It'd be great if you could help. Thanks!

We use eating chocolate for this recipe. It sounds like your chocolate was overheated or came into contact with some water. What method did you use to melt the chocolate?

I just heated it on a stove in a saucepan. I had only washed the saucepan right before to use it again, so maybe I didn't dry it enough...I tried again, this time in the microwave though, as I didn't want to risk it and waste all the chocolate again. However, I found that 500g was definitely not enough, and in total I had to use about 800g of chocolate. I used a similar pan to yours, give or take a few centimetres...but anyway, thank you! It looks quite yummy :)

This was so easy to make, taste's awesome. I used all dark chocolate, Nestle buttons, and used turkish delight and red snakes cut up instead of cherries, added macadamia nuts instead of peanuts and it turned out perfectly. Love this site and keep the yummy recipes coming.
