Potato Salad Recipe


The bacon can be omitted from this salad to make it suitable for vegetarians.

Serves 4-6 as a side dish.

550g small potatoes, washed
120g (about 4 pieces) short-cut bacon, finely diced
3 large eggs, hard-boiled and peeled (we use eggs with a minimum weight of 59g)
2-3 green onions (green shallots), finely chopped
188g (3/4 cup) good quality mayonnaise
Scant 1/2 teaspoon salt, or to taste

Place unpeeled potatoes in a large saucepan. Add enough water to cover potatoes. Cover saucepan and bring to the boil. Reduce heat to a medium boil and cook until potatoes are just tender (you should be able to pierce the potatoes with a knife and meet no resistance). Drain potatoes and cool to room temperature. © exclusivelyfood.com.au

In a small frying pan or saucepan, fry bacon over medium heat until cooked and lightly browned. Set aside to cool.

Remove skin from potatoes, if desired. Chop potatoes into bite sized pieces. Chop eggs.

Place all ingredients in a large bowl and stir gently to combine. If you like, you can reserve some of the bacon or green onions to sprinkle over the salad before serving.

The salad can be served immediately, or refrigerated until cold. Store in a covered container in the refrigerator.


How to hard-boil eggs

Place eggs in a small saucepan and cover with cold water. Cover saucepan and bring to the boil. Reduce heat to a simmer and cook for 8 minutes. Remove from heat, drain eggs and cover with cold water to stop further cooking of the eggs.

A mix of sour cream, mayo (whole egg) and wholegrain mustard is nice aswell. I also fry some garlic with the bacon.

I use Paul Newman's Own Ranch Dressing instead of Mayo. I reckon that it really lifts the flavour of the potato salad.

This is also yummy made with gherkins, diced ham cubes instead of bacon, boiled eggs (we don't use spring onions) although you could use chives I guess, and we use Kraft Coleslaw Dressing, instead of the Mayonaise, now that is a delish alternative...

I just love your recipes! I make a similar potato salad, but I use baby potato's cooked in skin (for that extra texture, colour). I add a can of baby corn (sliced in half), diced bacon and cubed green pepper. Feta for garnish.
Mix together mayonnaise & condensed milk(depending on your sweet tooth)- I like the mixture quite thick, so that it sticks to the potato salad.
Different, rough and lovely!

You could try dressing the salad with a combination of low-fat natural yoghurt and reduced-fat mayonnaise.

Got to have corn kernels in there!!! ;-) Also, used a cheaper mayonaise the first time and found that it is definitely worth using a quality mayo. Praise Traditional was perfect.

So many simple delicious recipes on your site! I absolutely love it! I find though when making potato salad, it's easier if you first peel and chop the potatoes before cooking. They don't take as long to cook this way and you won't squash the potato by cutting it when it's cooked as I have done so many times! Brilliant recipe. We just loved it!

I have been making potato salad this way for quite a while. I'm not welcome at family dinners without it...!!! I use Kraft or Praise 97% fat free mayo and it tastes just as good. I also add some 'light' shredded tasty Coon or Bega cheese while it's still warm.

I'm going to try this recipe soon. It will be very hard to top my mum's potato salad recipe though. But this one is simpler, so worth trying for those quick summer dinners or lunches.

I think the best mayo is Thomy. And I should know: I'm Belgian and everyone knows that Belgians are mayo experts. ;)

Fantastic! This is now my annual Christmas recipe - every host requests that I make it. Like other commenters, I peel and chop the potatoes, just to make it easier. I recently discovered low-carb potatoes, so that's what I'm using this year. I'll let you know if it affects that taste.

Also, I don't use Kraft, Praise or any other sweet mayonnaise. Instead I use a more expensive, less sweet, brand as potato salad shouldn't be sweet.

Well, I used the low-carb potatoes, and they were fabulous. If anyone's interested, I use S&W brand mayonnaise - it's just as mayonnaise should taste - no sweetness!.
