Lemonade Scone Recipe

This very quick and easy recipe produces lovely light scones. They are best served hot from the oven.

Preparation time: 15 minutes

Makes about 12-14 scones.

We use a 20ml tablespoon and 250ml measuring cup for all of our recipes.

325g (2 cups + 2 tablespoons) self-raising flour
167ml (2/3 cup) cold lemonade (use the carbonated type)
167ml (2/3 cup) thickened cream (35 percent fat)

Preheat oven to 225 degrees Celsius (205 degrees Celsius fan-forced). Line a baking tray with baking paper.

Sift flour into a large bowl. Combine lemonade and cream in a medium bowl. Add lemonade and cream mixture to flour and gently fold ingredients together until just combined (don't over mix the dough as this will produce tough scones). The dough should be fairly soft and sticky. © exclusivelyfood.com.au

Place dough on a lightly floured bench, form into a round and press out to about 3.5cm thickness. Cut scones using a floured 5cm diameter cutter. We find that using a quick, firm motion to cut the scones gives a them better shape and makes them less likely to stick to the cutter. Form the offcuts into another round and cut some more scones.

Place scones close together on the tray, so they are just touching. Bake for about 12-15 minutes, or until pale golden and cooked through.

If you like your scones to have a soft crust, cover them with a clean tea towel for one minute after removing from the oven. Serve hot with jam and whipped cream.

Best scones I have ever tasted and so much easier than the standard recipe. Made 9 big scones which were eaten by the family within 5 minutes of coming out of the oven. THIS RECIPE IS DEFINATELY A KEEPER!

Lovely recipe - however I found that I needed to add a bit more flour to the mix as the dough was very runny and "undoughlike". Apart from this the recipe is very easy and a day later the scones are still very nice and soft.

this is a great receipe,but for a diabetic version trade the lemonade for soda water, 0 sugar content and still all the flavour.

These scones were da bomb! I had 2 make bout 70. 4 Batches. It took a lil while but they were so nice. The party i made them 4 asked y i didn't make more and bring em' i jst sed u'll hav to wait till nxt tym.

These scones are fantastic! They can be reheated the next day and still taste great. Diabetic tip use low joule lemonade and low fat cream, still taste great.

Wonderful! I substituted low-fat peach yoghurt for the cream and ginger ale for the lemonade- halfwholemeal flour. I added dried papaya, cherry and pecans.

This is the first time I've made scones with lemonade (I usually just use milk and cream) but they turned out lovely. Brush the tops with a little milk before baking to give a lovely golden crust. I also recommend using plain flour (all-purpose flour) and baking powder (2 tsp per cup) - you can add a little extra baking powder to get maximum rise in your scones.

what lemonade are you referring to?
is it just a mixture of sugar and lemon juice or is it the actual lemonade soft drink??

We use purchased lemonade soft drink that contains carbonated water, sugar, food acid, flavour and preservative.

Hey guys, this is the second of your recipes I've tried and I have to say, I'm absolutely hooked. I made these tonight to satisfy my baking fingers, and I had them done - including out of the oven - in half an hour.

My partner is in the process of moving out so most of his kitchenware are gone, but all I needed was a measuring cup, sieve, 2 bowls, wooden spoon, and baking tray. To save on space, I just rolled balls of dough and slightly flattened them like little buns and they came out well cooked and light, doughy and, well, perfect. Not sweet, not tasteless, perfect to team up with jam and cream.

Thank you so much for such a simple, versatile recipe!

ohhh yummy. We just made a double batch. My 3 and 6 year old helped with such an easy recipe they didn't lose interest. Fresh whipped cream and home made strawberry jam! I wonder if perhaps a dash of salt was needed?

Thanks for your suggestion; we'll try adding a little salt next time we make these scones. We do find that self-raising flour is already slightly salty due to the presence of sodium-containing raising agents (such as sodium bicarbonate).

Could it because of the lemonade I used? I used SOLO.

Hi Jess,

We haven't tried using a lemon-flavoured soft drink, such as SOLO, to make these scones, so we aren't sure whether this could have been the problem. Did the scones rise as much as other scones you've made? The carbonation level of SOLO is probably lower that that of lemonade, so using something like Kirks lemonade might help.

I made these earlier and was a bit concerned that I had failed, the mixture was extremely sticky and not dough-like at all. So you can imagine my reaction when they came out of the oven perfect. I made these scones a few weeks ago with left over ingredients, froze them then defrosted, put in microwave & they were an absolute hit at the family bday lunch, so nice & fluffy !! Have been asked to make another batch for yet another family bday lunch this w/end !!

I just made these but used milk instead. The dough was extremely runny and sticky, I guess that cream helps thicken it and keep it together. It was too sticky to cut, I had to rip bits off and try to form some round shapes. Tasting great though!!!

I add chopped dates to the recipe, and if I have run out of lemonade, I have used water & sugar and it still comes out great.
Sometimes I add an extra handful of flour if the dough is very wet.
For those who say they haven't risen much, could it be that you have rolled the dough out too thin?

Just made them and they came out great. Whole family liked them. Though it was slightly too wet so i added a bit more flour and i also used kirt's lemon squash instead of lemonade. thanks for the great recipe!

Unfortunately, we haven't tried adding pumpkin to the scones, so we aren't sure how well it would work or how much you would need to add. To make fruit scones, we would add about 2/3 cup of dried fruit to the flour before adding the wet ingredients.

wow so easy and delicious.made mine into little rolled balls.made about 24 bite size. cut in half made double 48 with cottees raspberry jam and homemade whipped cream.this recipe will make you look like a pro !!!

These are so yum! I made a trial patch as I'm having a party this weekend, and needed a scone recipe. I didn't know how'd they turn out, I had never heard of lemonade scones before, but they were great, and easy to make! The scones were a hit! The family finished them in 15 mins flat. Thanks for sharing the recipe. Hubby says they're even better than the ones his Nan used to make. I'm going to try this recipe with gluten free flour next! Fingers crossed they'll also work out.

Yes. The scones can be reheated in a microwave or wrapped in aluminium foil and reheated in an oven.

I made these scones today and also found the dough to be very sticky. I substituted the cream with yoghurt. I'm just wondering if your dough is also sticky when you make your scones? Should I increase the S/R flour to 3 cups perhaps? Also could you use pure cream instead of thickened cream?

Hi,
I really want to make these scones, but i live in England and i can't find thickened cream anywhere and i have never heard of it. Maybe it's just sold in Australia. Could i use anyother cream? maybe whipping cream as it is about 35%fat like the thickened cream is. What consistancy does this thickened cream have? Is it hard like clotted cream? I would much appreciate your response. These scones look fantastic.

I made these for my dad for father's day. I had never made scones before and was a bit nervous (especially because he is a chef!) but they turned out really well. he said they were great and the whole family enjoyed them. i will definitely make these again.

Whipping cream with about 35 percent fat would be suitable to use. Thickened cream is very lightly thickened with a small amount of vegetable gum, gelatine etc. It retains a pourable consistency.

These scones are so light and fluffy! They're so quick and easy to make, and living away from home without all your cooking equipment is a pain. But 3 ingredients + jam = good afternoon snack!

The dough was a bit runny, but a little sprinkle of flour fixed that. Also we substituted half of the cream with milk and they still taste fantastic!

The scones are freezable and a little zap in the microwave makes them fresh and warm to spread the jam and cream on top!


Best scone recipe so far! ♥

I just made these using birdseye's gluten free sr flour and they worked brilliantly. Just as good as using normal wheat flour! My Mum who's a celioc couldn't get enough of them!

I was looing for a griddle scone recipe but decided to give this a go on the BBQ hot plate.

I used 170ml blackcurrent and raspberry yoghurt plus the lemonade.

Used the hot plate reasonably low.

Great cruchy crusts both sides. All eaten as quick as they came off the BBQ.

I can't believe it, a scone I can actually make and it works out!!!! I am 50 yrs old and never been able to make a good scone, well now I have this recipe, I will be able to at anytime. They so quick and easy. I have also added some ham and cheese to some for my husband to take to work for his morning tea..he is really impressed...best recipe EVER!!!!!!

I had the same issue with the brown flecks through them, certainly didn't effect the taste at all! Easiest and best scone recipe I have ever tried, I made a second batch the next day they were gone so quickly.

I normally make rock cakes not scones - this is a fool proof recipe! I used Mountain Dew, scones were light fluffy lika granny's but maybe laking bit sugar for my taste. Oh and I tried Cola ones they were light fluffy with unusual after taste and odd latte coloured scones lol pass next time. Trying Pasito next hope they are passionfruit flav. Happy Cooking!

great recipe, my 6 year old made me scones at school and told me they used lemonade. being the best ever scone I had ever tasted I said 'noooooooooo its not possible' and thought just by chance i'd look it up on here and I had to tell him that mommy was wrong and he was right...

I did notice a comment saying theirs didn't really rise and I suggest to put them on the tray very close together and rather than rise up and out, they rise UP HUGE...

I made these out camping with friends using beer and sour cream. They turned out fabulous!! And the leftovers were great cut and toasted for breakfast the next day.

I figured out what I did wrong the first time - my oven temperature was inaccurate. Now that I adjust it accordingly, the scones turned out beautifully risen - nice on the outside & soft on the inside. This will be my scone recipe from now on.

I just made these scones and although they came out looking like odd shaped rocks, they were fantastically light and short. I used double cream instead of the thickened cream and somehow managed to make 8 scones instead of the 12-15 haha. Highly recommended!

I found recipe awhile ago and my hubby loves them so much he woke me up @ 3am to bake them cause he was craving some! The kids and I have used kirks sugar free drinks (red creaming soda makes them pink) and low fat cream to make them diabetic & kid friendly. Always taste great, thanks heaps!

I made this recipe and I could only get 9 1cm high scones uncooked.the recipe says 3.5cm high which confuses me as that is quite high and the recipe suggests it makes 12-14.

I made these according to directions, EXCEPT I used 1/2 cup of lemonade and 2/3 cup of heavy cream and it was just right. I do believe the original recipe calls for too much liquid so I had none of the runny dough problem. One of the commenters mentioned adding salt but trust me, no salt is needed. In fact, if you eat them without any kind of topping, they are simply a savory scone. I made a second batch and added candied ginger and chocolate...omg! I used round cookie cutters for consistency so they’d all be standard size and they rose beautifully. Thanks for sharing this keeper!
